About This Coffee

Prosperidad de Chirinos has around eight hundred members who grow coffee in the high mountains of San Ignacio, perfect for quality coffee. Founded in 1968, it covers about 2,200 hectares in Cajamarca. A quarter of its members are women, supported by a women’s committee that helps them take leadership roles. 

The cooperative offers farming support, financing, and training in coffee tasting and other income activities like beekeeping and avocado farming. They give awards for top coffees and train leaders in management and finance. There’s also a youth committee to help young farmers. 
Farmers in Peru usually process their coffee on their farms using the fully washed method. They pulpy the cherry, ferment it, and dry it in the sun. Smaller farmers often dry coffee on tarps on the ground or under their roofs. 

More cooperatives are now building raised beds or drying sheds for members to dry their coffee. Some farmers also use drying greenhouses and special beds as they focus on specialty coffee. And so after drying, coffee is sold in parchment to cooperatives. Non-members can also sell to cooperatives.
