About This Coffee

Cherry is handpicked and taken to the wet mill. Rodrigo chose a so-called “Purple Caturra,” a coffee variety with different leaves and cherry color than Red Caturra, and it has higher sugar levels. The cherries are floated to remove any bad ones. Before processing, Rodrigo mixes 10 kinds of yeasts, including lactobacillus, saccharomyses, and cerevisiae, plus mango to add flavor, and a sugar source like molasses or panela to help fermentation. The mix is sealed and left to ferment for 8 days. After removal of the cherry pulp, the coffee ferments with the fruit mix for another 7.5 days. Then, the coffee parchment is washed and dried on special beds for 20 to 25 days, with regular raking to dry evenly.

Inspired by his grandfather’s legacy, Rodrigo has transformed the farm into a hub for experimental processing and rare varietals—while maintaining deep respect for the land and local biodiversity. Rodrigo is known not only for his deep agronomic knowledge but also for his dedication to cup excellence. 

Located near the Cueva de los Guácharos National Park, one of Colombia’s 59 protected natural areas, Finca Monteblanco benefits from a unique microclimate and rich ecological surroundings. The nearby Suaza River provides clean, fresh water for both cultivation and post-harvest processing—critical for producing high-quality specialty coffee.

Finca Monteblanco is also recognized for its sustainable practices and commitment to quality. Rodrigo often experiments with innovative processing techniques, including anaerobic fermentation and natural drying, pushing the boundaries of flavor while protecting the integrity of the environment.
